Banana Berry Muffins

Ingredients


4 cups bran flakes

1/2 cup of buttermilk or 1/2 cup of milk and 1tsp of white vinegar

1/2 cup white sugar

1/2 cup brown sugar

1/2 cup butter softened

2 eggs

1 1/2 cups mashed bananas (4 small or 3 medium)

1 teaspoon vanilla extract

1 1/2 cup flour

1 1/2 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon baking soda

1 1/4 cup frozen blueberries

1 cup chopped pecans

1/3 cup packed brown sugar

3/4 teaspoon ground cinnamon




Directions



  • In a large bowl, cream butter, 1/2 cup brown sugar and white sugar.
  • Beat in eggs on at a time.
  • Beat in bananas and vanilla.
  • In another large bowl gently mix bran flakes 1/2 cup of pecans and buttermilk.
  • In a medium bowl sift the flour, baking powder, salt, and baking soda.
  • Gradually stir into creamed mixture.
  • Gently stir in bran mixture.
  • Fold in blueberries.
  • Fill greased muffin cups until heaping.  
  • Combine 1/2 cup pecans, 1/3 cup brown sugar, and cinnamon.
  • Sprinkle pecan mixture over batter.
  • Bake at 350degrees F for (jumbo)32-35minutes, (standard)25-30minutes, (mini)18-20minutes or until a toothpick comes out clean.
  • Cool for 10 minutes before removing to wire racks.



Serve or freeze for later.
